Ricotta cheesecake (torta di ricotta) has long been a sweet ending to many Italian meals, and the beauty of it is that it's quite easy to make. Versions may vary from region to region. For example, in and around Bologna, pine nuts are a frequent inclusion, while in Sicily, citrus peel is the preferred addition to this creamy treat. We've combined both to create a very special dessert for our organic beer dinner.
