EXTRA HOPPY ICE CREAM

While we usually don’t recommend cooking with beers that have exceptionally pronounced hop bitterness, we just couldn’t resist experimenting with the 2015 Odd Year Release of Stone Old Guardian Barley Wine - Extra Hoppy. We wanted to both showcase and enhance the balanced flavors of bitter citrus, pineapple, and vanilla, so we wrapped them in a rich blanket of creamy custard and gave them a spin in the ice cream maker. The result is delightfully (and deliciously) odd!

Servings: Makes 1 quart
Active time: 1 hour
Total time: 24 hours

Ingredients
  • 12 ounces Stone Old Guardian Barley Wine - Extra Hoppy
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar
  • 1/4 teaspoon sea salt
  • 6 large yolks
  • 2 cups heavy cream

Directions
  1. In a large saucepan, bring 5 ounces of beer to a gentle simmer over medium heat. Cook until the volume is reduced by half, about 10 minutes. Pour the remaining beer and the vanilla into a 2-quart stainless steel bowl, and then add the reduced beer.
  2. In a large bowl, prepare an ice bath and place the 2-quart stainless steel bowl inside to cool the beer mixture before adding the custard.
  3. In a large saucepan, whisk together sugar, salt, and egg yolks until smooth. Whisk in cream and cook, stirring constantly, over medium-low heat, until the mixture thickens to a custard-like consistency and registers 180 F, about 10 minutes. 
  4. Immediately pour custard into the chilled beer mixture. Whisk occasionally until the custard reaches room temperature, then cover tightly with plastic wrap and refrigerate for at least 8 hours.
  5. Freeze in an ice cream maker according to the manufacturer’s instructions. Transfer to a plastic container and cover with a tight-fitting lid. Freeze until firm, at least 8 hours but preferably 24 hours. 

Cook's Note: Due to the high alcohol content of the beer used in this ice cream, it will always remain a softer, creamier consistency.
