This fresh version of a New York City classic uses beer to add the distinctive smokiness to salmon. The slow, cold marinade 'cooks' the salmon and imparts an incredible depth of flavor. Serve it on squares of rye bread slathered with coarse mustard, and you may never have to go to the deli again.
